Sunny Drinks for The 4th of July 0

Are you gearing up for Fourth of July? Whether you have solar panels or not, we’re hoping that hours of endless sunshine and friends will be part of your Independence Day celebration.

In honor of the upcoming celebration of America’s freedom, and because all of us here at EcoOutfitters love fun and sun, we’ve put together a list of “sunny” drinks you may want to enjoy all summer long.

1 – Suncatcher – The drink of choice for solar #tweeps at the trade show PV America West, the Suncatcher has also become the official signature drink of our #SolarChat. (Though we joke about settling in with one before the chat, we usually wait until after office hours to imbibe!) Here’s the recipe:

    • one shot (2 oz.) Pinnacle Whipped Vodka
    • 4 – 6 oz. orange juice
    • Whipped cream on top
    • Twist of lemon

Mix Pinnacle vodka and orange juice over ice in a martini shaker. Pour in to a martini glass. Top with whipped cream and garnish with lemon twist.

2 – Mango Mojito – They were pouring this sunset orange libation as the house drink at the Rainforest Alliance cocktail party, so it’s become the second official drink of EcoOutfitters. The bartenders at the Rainforest Alliance we attended this past spring made the simple syrup with pure cane sugar grown sustainably; refined white sugar will create a drink that’s not quite as sweet.

      • 1/4 cup club soda
      • 2 oz. rum
      • 2 T. simple syrup
      • 1 T. mango nectar
      • mint leaves
      • 1/2 lime

Muddle mint leaves, simple syrup and juice from the lime in a glass, bowl or martini shaker. Pour in to high ball glass. Add ice. Add club soda, rum, and nectar. Stir. Garnish with additional lime wedge or slice.

3 – Tequila Sunrise – What solar-worshipper can resist a drink with this name? This icy cold, easy-to-make drink is perfect for barbecues and warm weather because of the high juice-to-alcohol ratio. Go ahead, have another!

      • 1 – 2 oz. tequila
      • 6 oz. orange juice
      • 1 – 2 oz. grenadine
      • orange slice
      • maraschino cherry

Mix tequila and OJ over ice in a martini shaker. Pour into high ball or martini glass. Tilting glass, add grenadine carefully so it drifts to the bottom, mix gently to create the “sunrise” effect of reds, oranges and yellows. Garnish with a marischino cherry and orange slice, creating a sunburst.

Feel free to make “virgin” versions of the last two drinks by omitting the alcohol. (Just add club soda to the tequila sunrise to lighten the orange juice.) If you come up with a virgin Suncatcher variation, please share it in the comments section below!
